It is best to prepare with veggies like Ash gourd, Bottle gourd, Mangalore cucumber (Oora southe), Mangalore brinjal (Gulla). It is healthier than the normal koddelu since it doesnot use toor dal and uses little coconut.
Ingredients
- Use any one type of vegetable – Ash gourd, Bottle gourd, Mangalore cucumber (Oora southe), Mangalore brinjal (Gulla)
- Salt
- Jagerry – 1 lime sized
- Tumeric
- Red chilles – 6
- Methi seeds – 1Tbsp
- Chana dal – 3Tsp
- Coriander seeds – 2 Tsp
- Coconut – 5Tsp
- Hing
- Curry leaves
Method
Cut the vegetable in square shape. Take it in a sauce pan and water to it, just enough to submerge the cut veggie. Add salt, tumeric and Jagerry and cook it.
Take a tadka spoon. Add ghee, chana dal, methi seeds and red chillies and fry till aromatic smells comes out. Add hing and transfer the contents to a mixer jar. Add coconut, coriander seeds and tamarind to it and grind to a fine paste.
Now add the mixy contents to the cooked veggies and boil along with curry leaves.
This dish goes well with rice (white or red).
