This recipe will give you restaurant style vegetable dosa. Vegetable dosa is healthy as well as filling and is great when entertaining guests. Urad dosa batter is used for this dosa.
Ingredients for vegetable mixture
- Carrot – 2
- Potato – 2
- Beans – 20
- Peas – 1 cup
- Onion – 2
- Mustard seeds – 1tsp
- Urad dal – 1tsp
- Red Chillies – 3
- Curry leaves – 1 strand
- Hing
- Tumeric
- Garam masala – 1tsp
- Amchur powder – 1tsp
- Green chillies – 2
- Coriander leaves – 1 cup
- Salt
- Oil
- Add any desired veggies of your choice
Method for vegetable mixture
Finely chop all vegetables and cook it with tumeric and salt. Preferably cook it in a sauce pan and strain extra water. This will help to make the vegetable mixture dry.
Finely chop onions. Heat oil in a Kadai. Add Mustard seeds and once it sizzles, add urad dal, red chillies and fry a little. Sprinkle a pinch of hing to it and saute.
Now add the chopped onions and saute till the onions turn translucent. Add Garam masala, amchur powder and finely chopped green chillies to it and fry. Sprinkle salt as per taste and mix well.
Now add all the cooked vegetables and mix well. Fry a little till the mixture is dry. Switch off the flame and add coriander leaves and mix well again.
Making Dosa
Heat dosa pan and pour Urad dosa batter on it. Dont spread it thin, the dosa should be thick as a Uttappa. Now take the vegetable mixture and generously sprinkle the mixture on the dosa. Gently press the mixture and spread ghee on the dosa and cover the lid.
Once the dosa is cooked, flip it on the vegetable side and let it roast. Once you can see the roast on the veggies, take it from the pan.
