Baingan Ka Bharta

This is a fool proof way to make Baingan ka bharta. If you struggle to fry and peel the brinjal to make Bharta, try this recipe.

Ingredients

  • Brinjal (Egg plant) – 3 big
  • Green chillies – 6
  • Garlic – 8 pods
  • Oil for greasing the brinjal
  • Mustard oul
  • Jeera – 1Tsp
  • Onion – 2
  • Salt
  • Tumeric
  • Garam masala – 1tbsp
  • Coriander powder – 2 Tsp
  • Tomato – 1
  • Peas – 1 cup
  • Coriander leaves

Method

Slit the brinjal on one side. Stuff garlic and green chillies in the slit. Coat oil onto brinjal.

Put it in the oven till the brinjal is cooked. You will know when you see the brinjal peel wrinkled. You may need to turn the brinjal so that all sides are cooked well.

Once cooked, take it out and when it is still hot, take a spoon and scoop the inside of the brinjal out, leaving the skin out. Mash this well and keep aside.

Now heat up a pan, add mustard oil. Mustard oil should be heated till smoke starts coming out of it. Now simmer the flame, add jeera. Once jeera starts to sputter, add chopped garlic and fry for a minute. To this, add finely chopped onion and fry till translucent. As per taste, add finely chopped green chillies. Remember, green chillies are also added with mashed brinjal, so dont add too many green chillies.

Add the dry spices – coriander powder, garam masala and tumeric. Add salt as per taste. Fry for a minute and then add peas and mashed brinjal.

Mix very well and keep stirring for about 15 minutes.

Garnish with coriander leaves and enjoy the bharta with hot rotis!
